So a mage Arcane Brilliantizes my priest and then I can't read a
scroll of intellect V as I get a message that a stronger spell is in
place.

A priest forts a warrior with the highest fort and the warrior can't
use a scroll of stamina and gets the same message.

I'm just trying to figure out what can be combined.

Seems like stamina food will work with a priest fort.

My priest eats this Golden Fish Stick and it bumps up her heal. Then I
have this elixir or something that will improve my healing as well, or
maybe I can only get the greater of the two, not sure, haven't figured
out the exactness of this plain and simple strategy yet but I'm
working on it.

Food/drink buffs stack with *anything*. You can always have one
(but only one) Well Fed buff.

As far as I can tell....

You may stack
ONE food buff
ONE drink buff
ONE 'guardian' elixir
ONE 'battle' elixir
multiple spells and auras (depending on how many folks you have in your
party/raid)

The scrolls cast spells - and it appears that they do not stack with similar
spells. So, if you already have an Arcane Brilliance buff, the scroll for
plus int will not work UNLESS it is of higher value. Similarly, if you have
a scroll in place, a low level spell will not replace it. In a way, it is
good it works that way - it would be nasty of Blizz to allow you to consume
a scroll when the buff doesn't stack. Of course, if you use the scroll
FIRST, and then someone casts a bigger/better spell, you may as well have
saved the scroll.

Rum buff for a super stamina boost for those times when I was facing a
tough situation. I tried doing this recently - 2 or 3 months ago
perhaps - and discovered that the Rumsey Rum buff cancelled out my
Well Fed buff. I'm not sure when this change was made. Bummer. :-)

There was a while there before BC that I could have 3+ potions plus
buffs from spellcasters plus food. After BC and patches came I could
only do 2. (I could have the elixir of fortitude and the armor/defense
one and the troll's blood - plus food + scroll's all on my Rogue and
she was BA!)

the above is technically correct, you CAN have one food and one drink
buff, BUT they can't both be stamina buffs.
I.e.
goldfish + rumsey = OK
sporefish + rumsey = nope
feltail + rumsey = nope
basilisk + rumsey = OK

And also a buff on your weapon (wizard oil, sharpening stone, etc.)

Note that if you pop a flask it will count as both a battle elixir and a
guardian elixir.
