While its prolly right there in front of me...

Once you have assigned, say someone to the 'barracks', is he/she
there for life? There is no way to rotate minions in and out of the
different shops? I'm thinking there must be...I'm just to lam to
figure it out.

You can indeed change them: when you select the building on the
architect table, it'll show the follow who's assigned to that
building, and there's a little red circle with a cross through it just
next to the follower's portrait; it's tiny, but it is there! Click
that, and your follower is removed from the building and put back in
the pool of regular followers. You can then assign another follower,
or just leave it unassigned as you please.

I'm still trying to figure out the best mix of buildings. Its quite
unclear if its better to get one that matches your professions, or
complements them. While levelling, the enchanter seems mandatory,
since you wind up with a ton of soulbound crap you can't sell. The
barracks can provide you with a bodyguard, but only in the main world,
not in instances, etc. This really limits their usefullness, since
most players get to the point where they're effectively invulnerable
in the main world.

For me, a building to match the profession is best, as it lets you get
more materials more quickly. I had the enchanter while levelling,
ditched it after that for a storehouse as I was sick of my bags
filling up with reagents all the time, being able to dump them in my
reagent tab without trekking over to Ashran was totally worth it. My
3rd small building is the salvage yard, which is essential if you want
to play the follower minigame, but not needed if you're not interested
in that side of it!

Barracks is fantastic for me, as a healer my dps sucks and the
bodyguard is (usually) a huge help, although I wish I could persuade
my warlock follower to only fight mobs I have tagged and not go to
join in other fights nearby which are nothing to do with me *sigh*.
But it's not something I'd be without on my main until I gear up a lot
more - alts may well not bother.

War Mill is great while levelling, the gear upgrades are a huge boost,
it's not much use after that, really low chance on follower upgrades
so it felt like I was wasting resources, binned it for stables in the
end. That one looks not that amazing, being able to do stuff while
mounted is cool but I'll likely drop it once I've tamed all my mounts.

True but unless they have a lvl 100 enchanter assigned it is a bit of a
waste, only 1/3-1/2 that of a lvl 100 or a character disenchant.
Stockpile all soulbound gear until your bank is choked, then either
organise a visit or build an enchanter building then de.
It depends on the mats price off server ah which was unstable in the
first weeks but the vendor price and de value was stabilising to about
breakeven. 150 drops at 25-50g vendor gave 4k worth of dust and shards.
There is little reason to keep the enchanter permanently.
Shard de is worth it , dust barely.
Neither is worth it for less than a lvl 100 enchanter assigned.

At first the dust price was 50-100g and I bought thousands of shards at
10-15g, it made no sense but people must have been de-ing like crazy to
get dust and were selling their shards.
That reversed after a couple of weeks now dust is 5-10g and shards are
75g. [ not that I am playing so I can't say they actually sell at that ]
Worth it to de if it should give a shard but vendor is usually worth
more than a few dust. Not even counting the time and space to hoard them.

Once you have a scavenger or three the cost of swapping out buildings is
easily recovered so value of a couple of epic level items with crystals
drops would be far greater than the cost to build a de building for a
couple of hours.
I count the cost of a gr at about 4g so about 1k gold to build a lvl 2
study or other lvl2 building. Swapping them around is not a cost you
would worry about if you had anything more useful to your character on a
daily basis.

I have been doing an enchanting building on all my toons that have just
1 crafting professions or none. I de everything I can and send the mats
to my toon with enchanting. He can use all he can get at this point for
work orders and leveling.

Once that changes I will change those buildings to something else.
