I have my main's skill up to about 297 and the topline patterns that I
know have expensive ingredients.

What I would like is some kind of online guide listing what level loot
drops will give what materials when disenchanted. Does anyone have a
link to such a guide?

It's not an exact science, I find that green quality items towards the sharp
end of lvl 70 have a higher chance to yield planar essence and occasionally
large prismatic shards. Green quality items in the low 60's are much more
likely to yield only arcane dust.
I've found also that the general rule of thumb seems to apply in TBC that
armor is more likely to yield dust and weapons more likely to yield essence.

THat's pretty much the gist of it.

lvl 61 to 65 green armor generally yield 2-3 arcane dust or 2-3 lesser
planar essence at about 75% dust to 25% essence. Weapons in that bracket
aren't worth disenchanting because they tend to yield 2-3 lesser planar
essence or 2-3 arcane dust at about 75% essence to 25% dust and often vendor
for more than the essences/dusts are worth (5 or 6 gold except for wands and
bows/guns which vendor for 4-5g).

Lvl 66-70 green armor yield 2-5 arcane dust or 1-2 greater planar essence
(again at about 75%/25%) and weapons disenchant into 1-3 greater planar
essence or 2-5 arcane dust, again at about 75%/25% ratio. Every lvl 66+ blue
armor item I've D/Eed so far produced a large pristine shard which go for
about 15g on my server. I haven't D/Eed a 66+ blue weapon yet.

http://www.auctioneeraddon.com - this site has Enchantrix available
for download, which gives you extra information when hovering over
green+ items, regarding what shards they tend to turn into when DE'd.

Note, BC items aren't in there yet, and a small bit of the 50+ stuff
doesn't have information either.

I appreciate the info, but I've got some experience with Echantrix. Not
the info I am looking for, I think.

I want to what level mobs I need to farm for the type of mats I need.

Ahh, okay - pardon me :)

In that case, http://www.thottbot.com is where I'd start - look up the
shards you need, see where they've disenchanted from in the past, see
who drops those, and viola you've got a zone to farm in :)
