Have to say I found that stopped making good money in about Wrath era,
I found it much more profitable to buy cheap ore, convert to gems, cut
gems and sell them, than to go farming for any type of resource*;
those are only really high value the first 3-4 weeks of an expansion,
after that the market is flooded and prices are so low it's a waste of
time. Might just be a difference in markets between my very high pop
server and yours though!
That said, I have the opposite problem on the super-low pop Alliance
side, prices sky-high but nobody interested in buying...
*One exception: fish - everyone hates fishing so those keep their
value, if they're used in useful buff foods ;-)

I love buying gems that are below vendor price. Don't make tons of
money on them but still, it's something for nothing :-) Also nice to
find uncut gems which are below the vendor price of cut ones... then
cut them all and either vendor or even sell (some sell quite well!)
Post by LewisSave seasonal items to sell them off season. (For example, I tried to
sell Peddlefeet last year just after the holiday for 250g. I sold it in
December for 1200g instead).
Also since you can learn and then cage pets accountwide, check out
other servers you have characters on; prices can vary a lot.
Faction-only vendor pets that cost silver on one side sell for 20g+ on
the other, for example.

It's very lopsided on my server, Horde has far higher supply and
demand, means on things that sell regularly like gems, food and the
like, you can make a steady, if not that high profit, Alliance has
very low supply and demand so sales are less common, but can be quite
big. Been over a year since I could make a 250g profit on a (non-meta)
gem on Horde, managed it on Alliance this week though! But overall I
sell far less on Alliance (and indeed can supply far less due to
limited ore supply; my alliance JC is not a miner, not the best
choice!)
Surprised you make any money on leather, I assumed with the permanent
Timeless isle turtle farm that supply would be so high that prices
would be really low. Or maybe your server doesn't have quite so many
farmers as mine!

They sell on alliance for me (almost all listed are stupid prices so I
just go for a sensible price and they sell easily), on horde I just DE
them and sell enchant scrolls instead.
My biggest profits are almost entirely from consumables; mainly gems
but also food (particularly anything popular with raids, there are a
lot of raiding guilds on Horde), glyphs (you'd think those would be
less profitable since they were made one-time only but nope, still
enough alts levelling I guess) and enchants. Flasks are a bit iffy,
Golden Lotus costs nearly as much as the flasks so it's only
profitable if I get a multiple flask proc, but since I specced my
alchemist that way on purpose, it's profitable enough.
